I love this recipe! It’s so easy to make and doesn’t cost much. Plus, it’s easy to get in my 5 a Day veggies. And they taste incredible!
Ingredients:
3 medium carrots
3 large potatoes
4 large onions
4 cloves of garlic
50g fresh Parsley
2 whole eggs
2 egg whites
Extra mature cheddar cheese 200g
Use cooking oil
Equipment is required
Saucepan
Chopping board
Sharp chopping knife
Cheese grater
Spatula
Grill
Method
Next, peel and grate the carrots and potatoes. Then, slice and peel the onions. The next step is to break two eggs into small pieces and then add two egg yolks. Once you have done this, whisk the eggs vigorously until they are a uniform consistency. Give the parsley an additional rinse under the cold water. Next, finely chop the parsley with a knife. Chop the garlic into pieces. Give the mixture a good mix. Place the cheddar cheese in a separate bowl. Place the mixture in a saucepan. Heat it to high heat. With your hands, take a small portion of the vegetable mixture and shape it into a patties. You can fry the patties gently until they become crispy on the underside. (Don’t worry too much about the top half as we’ll be grilling them soon). Once the patties have been fried to a medium-rare done, you can place them under the grill. Grill until cheese is golden. Serve with a simple side salad made from herby ingredients. Make sure to have plenty of water, either bottled or filter, with your meal.
